These virgin Périgord walnut, hazelnut and almond oils are extracted from rigorously selected fruits and produced with the greatest respect for tradition. The grains of walnuts, almonds and hazelnuts are ground by a 500 kg flint millstone. The resulting paste is heated for 45 minutes at 80°C in a cast iron pan. This is a key step that gives the oil its character as the heating process releases the aromas of the fruit. Under the pressure of 40 tons, exerted by a jack operated by a hydraulic pump, the oil flows out and perfumes the mill with its subtle fragrance.
