Werner and Jeanne Schertenleib came from Switzerland and in 1950 took over the Saulxures cheese factory, then producing Emmental and Munster cheeses. Currently, it is the last independent, family-owned cheese factory that produces washed-rind cheeses using traditional methods. This cheese is a product with a protected designation of origin, which is a guarantee of quality.
